CREAM CHEESE PANCAKES
Most everyone gets tired of eating the same thing day in and day out. This is especially true in a low carb diet. You can only eat so many eggs for breakfast before the sight of them turns your stomach.
After a couple of weeks of cooking eggs with everything I could think of I decided to go searching for other alternatives. One of the first recipes I came upon was the cream cheese pancakes.
At first I was skeptical since I never really enjoyed making pancakes but this recipe seemed simple enough so I decided to try it. All I can say is oh my gosh, I should have tried it sooner!
These pancakes are not only easy to make but SO delicious and the best part is that they fill you up. They don’t make you get that heavy feeling, sleepy head thing, that usually happens with regular pancakes.

Cream Cheese Pancakes
(1 Serving, makes approx. 3-4 pancakes)
2 oz of cream cheese
½ tsp of no calorie sweetener (I use Truvia but it’s your choice)
½ tsp of cinnamon (Optional)
½ tsp butter or coconut oil spray
For this recipe, I highly recommend you use a blender, I used the Nutribullet but any blender will do.
Place the eggs, the cream cheese, sugar and cinnamon into the blender and blend for 30-60 seconds or until all ingredients all combined.
Pour into a bowl and let it stand for approx. 2 minutes until the bubbles settle. While you are waiting for that put a small skillet pan on medium to high heat and begin melting ½ tsp of butter.
Once the butter has melted pour some of the batter into the pan and cook for 2 minutes. Flip the half-cooked pancake and cook it for another minute.
That’s pretty much it, you’re done. Enjoy your pancakes with sugar-free syrup or in my case I eat them just like that with a couple of slices of cheese and coffee.
