Scrambled Eggs with Spinach, Tomatoes and Onions

Ingredients (Serves 4)
- 1 medium tomato, chopped
- ½ cup of baby spinach, sliced lengthwise
- ¾ cup of yellow onions, chopped
- 8 eggs, scrambled, salt and pepper to taste
- 4 tbsp of butter
Melt the butter on a frying pan over medium to high heat.
Add the spinach and onions into the pan once the butter has melted. Sauté’ for 3-4 minutes, don’t let the spinach wilt.
Add the scrambled eggs, stir to mix the spinach and onions into it and let it cook for 5-8 minutes. Stir occasionally.
Stir in the tomatoes once the eggs are halfway cooked. Finish cooking the eggs, aprox. 3-4 minutes.
Remove from heat, serve and enjoy!
