Scrambled eggs nopalitos

 

This is one of my husband’s favorite breakfast meals. My daughters and I didn’t care much for them until we started Keto. For some reason, now that we are eating Low Carb High Fat the food has better flavor for us and that includes this dish. Let me know if you try it or if you have a different way to prepare this, I would love to hear from you.

Scrambled Eggs with Nopalitos

Serves 4

 

INGREDIENTS:

 Ingredients for scrambled eggs nopalitos

8 Scrambled eggs (salt and pepper to taste)

 

5 tbsp butter

 

¾ cup of chopped onions

 

¾ cup of chopped tomatoes

 

½ cup to 1 cup of Nopalitos (drained and rinsed)

 

 

PREPARATIONS:

 

Melt butter in skillet.

 

Sautéed onions and nopalitos until nopalitos are soft. Aprox 5-10 minutes.

 

Add the scrambled eggs and cook for aprox. 10 minutes. Stir occasionally.

 

Add the tomatoes when eggs are half-cooked.

 

Remove from heat once eggs are cooked, serve and enjoy!

 

Recommended: Serve with Bacon and avocado slices.

  1. So I may just be a cooking novice. What are Nopalitos? What is flavor and country of origin?

  2. Nopalitos is cactus and they’re from Mexico. They have a very small spicy taste maybe? It’s hard to describe actually lol
