This is one of my husband’s favorite breakfast meals. My daughters and I didn’t care much for them until we started Keto. For some reason, now that we are eating Low Carb High Fat the food has better flavor for us and that includes this dish. Scrambled Eggs with Nopalitos
8 Scrambled eggs (salt and pepper to taste)
5 tbsp butter
¾ cup of chopped onions
¾ cup of chopped tomatoes
½ cup to 1 cup of Nopalitos (drained and rinsed)
Melt butter in skillet.
Sautéed onions and nopalitos until nopalitos are soft. Aprox 5-10 minutes.
Add the scrambled eggs and cook for aprox. 10 minutes. Stir occasionally.
Add the tomatoes when eggs are half-cooked.
Remove from heat once eggs are cooked, serve and enjoy!
Recommended: Serve with Bacon and avocado slices.
